Health","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"管理栄養士養成校では、栄養士・管理栄養士免許取得のために学外にて臨地校外実習を実施している。しかし、実習直前に大阪府にて緊急事態宣言が発令されたため実習先より受け入れ中止が相次ぎ、学内で実習を実施することとなった。\n 本研究では、給食の運営・給食経営管理論の臨地校外実習における学外実習と学内実習の実習内容を講義、演習、実習、調べ学習の4つの区分に実習内容を分類し、それぞれの時間を算出し、学外実習と学内実習の教育内容における時間配分の問題点を抽出する。そして、その課題に対する改善策を検討した。\n 検討した結果、学外実習と比較すると学内実習は、講義と演習の時間が長く、実習の時間が学外実習に比べると短い傾向であり、実習時間の確保と実習内容の充実が問題点として浮き彫りとなった。\n 対応方法として、学内食堂と連携し、学内食堂での実習やセントラルキッチン実習を取り入れたことにより、学外実習で実施している実習内容とは異なるが、実習の時間を確保することができた。本学独自の学内実習プログラムを作成したことにより学外実習と学内実習の実習内容の時間差を縮めることができた。今後の検討課題として、実習規模や現場の臨場感等は実際の校外実習と異なることや、学外実習同様の調理工程や作業を体得できない点を改善する必要がある。","subitem_description_type":"Abstract"}]},"item_10002_publisher_24":{"attribute_name":"出版者(英)","attribute_value_mlt":[{"subitem_publisher":"Otemae
